On the farm we raise pork that in the past, before the advent of the Nordic breeds, populated our countryside. It is a rustic breed, very capable of adapting to the wild. We let our pigs born directly from the sows, and then we let grow them up in the woods until adulthood. Than we slaughter and process them as the Umbrian tradition wants.
So this is how we produce pig loin, capocollo, ham, salami, bacon, and not only, without preservatives and with traditional spices.
